Creamy brie, homemade mixed berry jam, and roasted walnuts on toasted bread. Finished with a drizzle of thyme-infused olive oil, it’s pretty much the perfect breakfast treat.

Ingredients

For the mixed berry jam:

⁠ ⁠2 cups mixed berries (I used strawberries, blueberries, and black raspberries)

⁠ ⁠4 tbsp granulated sugar

⁠ ⁠1 tbsp lemon juice

For the toast assembly:

⁠ ⁠1 slice of your preferred bread

⁠ ⁠2 tbsp mixed berry jam

⁠ ⁠4 slices of brie cheese

⁠ ⁠Sprinkle of fresh thyme

1 ⁠ ⁠About tbsp roasted walnuts, chopped

⁠ ⁠Drizzle of extra virgin olive oil

Directions

Step 1

Make the jam:

Step 1

1.⁠ ⁠Place the berries, sugar, and lemon juice in a saucepan and bring the mixture to a boil over medium-high heat. Cook for about 10-15 minutes, stirring occasionally.

Step 2

2.⁠ ⁠As the jam begins to thicken and most of the liquid evaporates, turn off the heat and transfer the jam to a jar.

Assemble the toast:

1.⁠ ⁠Lightly toast the bread slice.

2.⁠ ⁠Spread a generous amount of berry jam over the toast.

Step 3

3.⁠ ⁠Slice the brie and place a few slices on top of the jam.

Step 4

4.⁠ ⁠Using a kitchen torch, melt the cheese until it bubbles.

Step 5

5.⁠ ⁠Sprinkle chopped walnuts on top.

Step 6

6.⁠ ⁠Mix thyme with olive oil and drizzle over the toast.
