Ingredients
For the mixed berry jam:
2 cups mixed berries (I used strawberries, blueberries, and black raspberries)
4 tbsp granulated sugar
1 tbsp lemon juice
For the toast assembly:
1 slice of your preferred bread
2 tbsp mixed berry jam
4 slices of brie cheese
Sprinkle of fresh thyme
1 About tbsp roasted walnuts, chopped
Drizzle of extra virgin olive oil

Step 1
Make the jam:
Step 1
1. Place the berries, sugar, and lemon juice in a saucepan and bring the mixture to a boil over medium-high heat. Cook for about 10-15 minutes, stirring occasionally.
Step 2
2. As the jam begins to thicken and most of the liquid evaporates, turn off the heat and transfer the jam to a jar.
Step 3
Assemble the toast:
Step 1
1. Lightly toast the bread slice.
Step 2
2. Spread a generous amount of berry jam over the toast.
Step 3
3. Slice the brie and place a few slices on top of the jam.
Step 4
4. Using a kitchen torch, melt the cheese until it bubbles.
Step 5
5. Sprinkle chopped walnuts on top.
Step 6
6. Mix thyme with olive oil and drizzle over the toast.
