Ingredients
1 cup sugar
2 cup milk
1 vanilla bean
2 cup heavy cream
3 egg yolk

Directions
Step 1
Add sugar and milk to a pot. Heat on low heat. We're not going to boil this. We're only going to heat it up.

Scrape out the inside of a vanilla bean pod and add to the warm milk mixture and mix it up.

Separate out 3 egg yolks and mix in a couple spoonfuls of the warm milk mixture. Then add everything back into the milk mixture and combine together fully. Keep this on low heat for 2 more mins.

Strain the mixture into a bowl. Fill up a larger bowl with ice water and place the bowl with mixture into it.

Step 5
Add in heavy cream to the mixture and incorporate fully. Let this sit until the mixture becomes nice and cold.

Add ice into another large bowl. Mix in rock salt and then dig the your mixture (in it's bowl) into the ice.

Mix this up continuously for a couple of minutes until it starts thickening up. Then throw it into the freezer for it to fully solidify. Enjoy.
