Ingredients

2 large green plantains

12 large tiger shrimp, peeled and deveined

1 cup fry batter mix

1 cup water (or as needed for batter consistency)

2 tablespoons of your favourite seasoning (e.g., Cajun, Old Bay, or a custom blend)

Vegetable oil (for frying)

Salt and pepper to taste

Step 1

Prepare the Shrimp and Plantains:

Peel the green plantains and cut them into thin slices, about 1/8 inch thick. You can use a mandoline slicer or a potato Peeler for even slices.

Prepare the Batter:

In a mixing bowl, combine the fry batter mix with water according to package instructions. The consistency should be similar to pancake batter.
