ndulge your senses in a symphony of citrus with this sensational Key Lime Cheesecake recipe. Imagine a creamy, velvety cheesecake infused with the zesty tang of fresh key lime juice, all nestled atop a buttery graham cracker crust. Key Lime Cheesecake

In a Food Processor, add in 18 Graham Crackers and 1/4Cup Sugar and mix together. Once mixed add 6tbsp Melted Butter, mix until crumble like texture is formed.

To a Parchment Lined Springform Pan, add in your Graham Cracker crust. Using a cup, pat down your crust and form a wall. Let bake in the oven for 12 minutes and into the freezer to chill.

In a Stand Mixer, add in 32oz Cream Cheese and 1Cup Sugar. Cream together. Once mixed, add in 1/4Cup Sour Cream, 3/4Cup Key Lime Juice, 2Tbsp Vanilla Extract, 3 Eggs (adding one at a time), 4Tbsp Flour & Zest of 1/2 Lime. Mix together until fully incorporated using Spatula to scrape sides, taste and adjust.

Add Cheesecake Batter to your baked crust. To a Aluminum Pan, add in 2 Inches of Water and place on bottom rack of oven. Add Cheesecake to top rack and bake for 55 Minutes.

After baking, crack open oven and let sit for 30 minutes. Then into fridge to set overnight.

Once Cheesecake has set overnight, garnish with Lime slices and Raspberries and Lime Zest. Serve & ENJOY!!
