Ingredients

115 g butter (1 stick)

120 g flour

6 g baking powder (1 1/2 teaspoon)

2 g salt (1/4 teaspoon)

½ vanilla bean

2 egg

100 g sugar

80 g milk

Step 1
For the Batter
Step 1
Melt the butter in a saucepan over medium heat.
Step 2
Cook until the butter foams and the milk solids turn golden brown. Remove from heat, and let it cool slightly.
Step 3
In a mixing bowl, whisk the eggs and sugar together until pale and thickened.
Step 4
Add the milk and vanilla bean seeds to the egg mixture. Mix gently.
Step 5
Sift the flour, baking powder, and salt into a bowl. Add to the egg mixture and stir

Slowly pour the cooled brown butter into the batter, folding gently until fully incorporated.
Step 7
Cover the batter and refrigerate for at least 12 hours

For the Baking
Step 1
Preheat the oven to 220°C / 425°F
Step 2
Grease a madeleine baking pan, and fill each cavity of the prepared pan about 3/4 full with batter.
Step 3
Place madeleines in the oven and set the oven temperature to 180°C / 350°FBake for 8–10 minutes or until the edges are golden brown and the center domes.
