Ingredients
4 salmon fillets (about 6 ounces each)
1 tablespoon olive oil
Salt and pepper (to taste)
1 lemon (sliced for garnish)
1 cup spinach (fresh or thawed frozen, squeezed dry)
½ cup cream cheese (softened)
¼ cup grated Parmesan cheese
2 cloves garlic (minced)
¼ cup cherry tomatoes (chopped)
1 teaspoon of old bay
1 tablespoon fresh dill or parsley (chopped)
Salt and pepper (to taste)
5 springs of rosemary & tyme
Directions
Step 1
Preheat your oven: Set it to 375°F (190°C).

2. Prepare the salmon fillets:
Step 1
• Slice a pocket into the side of each salmon fillet. Be careful not to cut all the way through.
Step 2
3. Make the stuffing:
Step 1
• In a mixing bowl, combine the spinach, cream cheese, Parmesan cheese, garlic, cherry tomatoes, old bay, lemon juice. Season with salt and pepper to taste.

• Mix well until all ingredients are combined.

4. Stuff the salmon:
Step 1
• Fill each salmon fillet with the prepared stuffing mixture. Press the edges together to seal the stuffing inside.

5. Cook the salmon:

• Heat the olive oil in an oven-safe skillet over medium-high heat.
Step 2
• Sear the salmon fillets on each side for about 2 minutes, and base with butter tyme and rosemary, until the salmon are golden brown.
Step 3
• Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through.

6. Serve:

• Remove the salmon from the oven, garnish with lemon slices, and serve hot.
